Oatmeal and Modì apple porridge in almond milk

Want to start the day with a healthy, nutritious tasty breakfast?
Try out this oatmeal porridge enhanced with delicious Modì apple, dried fruit (coconut) and honey. Thanks to the fibres contained in the oats and in the apple, you will feel fuller for longer, whilst the honey will give you the energy to face the day!
You can cook the porridge using a vegetable drink (we’ve opted for the delicacy of almond milk, but coconut milk, soy milk and so on would also be great) or cow’s milk.

Ingredients for 4 small bowls

Oatmeal | 2 cups
Water | 2 cups
Almond milk (or another vegetarian drink, or cow’s milk) | 4 cups
Modì apple | 1 + a few extra slices to garnish
One pinch of salt
Natural dry coconut qs
Ground pumpkin and sunflower seeds qs
Honey, to serve

Preparation

Mix the oatmeal with the water and leave it to sit in the fridge overnight.
The next day pour the soaked oatmeal mixture into a small pan, add the almond milk and a pinch of salt. Cook the oatmeal for 5-7 minutes or until creamy.
In the meantime peel and core the Modì apple and grate it coarsely. Take another apple and slice it thinly (without peeling it).
When the porridge is ready, add the grated apple: fill 4 small bowls with the contents and decorate the portions with the apple slices, a handful of coconut flakes, the ground seeds and a few teaspoons of honey.

Leaving the oatmeal to soak in water overnight will then allow you to cook it more quickly.
Tips #2
You didn’t leave it to soak? No problem! Simply mix the oatmeal with water and milk and cook it for 10-15 minutes at medium heat.

You can also sweeten the porridge with maple syrup, brown sugar, etc.
