Try out our Modì fritters! The batter, inspired from eastern-style frying, is soft and light, hiding slightly crispy but very juicy pieces of apple.
It’ll only take you a few minutes before your palate can enjoy a cascade of sugar and cinnamon!

Ingredients for approx. 12 small fritters
Modì apples | 2
egg whites | 2
00 flour | 4 level tablespoons
Cornflour| 2 level teaspoons
sugar | 2 teaspoons
frying oil
caster sugar and powdered cinnamon qs to serve
Preparation
Wash peel and core the apples, then cut them into segments (6 segments from each apple) or slice them.
Whip up the egg whites using two teaspoons of sugar. When they are soft and white, add the 00 flour and cornflour and mix well.
Heat plenty of oil in a frying pan or saucepan.
Dip the pieces of apple in the batter, making sure they are well covered. Plunge them into the hot oil.
Fry the fritters until golden brown and drain them on kitchen paper.
Turn them around in the sugar and cinnamon mixture to taste. Serve hot.
