Modì Apple and pdo Taleggio Cheese Flat Cakes

Friends over for an aperitif? No idea what to make them? Don’t panic :-)
Here’s an easy and speedy recipe to impress them with a minimum effort!
These soft flat cakes are fantastic to taste in company, because you can make them in the wink of an eye, just the time to open a bottle of wine and have a pleasant chat.
Taleggio cheese, with its strong flavour, is an excellent match for the delicate taste of the apple, but you can use any other cheese you prefer, as long as it’s a variety that melts easily.

Ingredients for for approx. 10 cakes (8cm/3 inches in diameter)

Pizza or flatbread dough (already rolled out) | 400g/14oz
Cored and sliced Modì apple | 1
Pdo Taleggio cheese | 10 pieces
To garnish: fleur de sel (finest quality sea salt), black pepper, extra virgin olive oil, thinly sliced red radicchio and rocket salad  qs

Preparation

Cut 10 small disks out of the flatbread dough using a round pastry cutter (or a drinking glass) and lay them out on a baking tray lined with baking paper.

Lay the Modì apple slices on the flat cakes, season with salt, pepper, a drizzle of oil and bake at 220°C/430°F for approx. 10 minutes.

Take the tray out of the oven and add a piece of Taleggio cheese on each flat cake, put them back in the oven and bake for another 5 minutes or until the cheese melts.

Decorate as you prefer, with red radicchio and rocket salad leaves.
