Modì Apple Crumble with vanilla and almonds

Ingredients for 4 people

Modì apples, washed, peeled and cored| 500g/18oz
Cane sugar | 50g/1.8oz
Lemon juice | 1
Vanilla| ½ teaspoon of seeds

For the crumble:
Self-raising flour | 85g/3oz
Cane sugar | 50g/1.8oz
Diced cold butter | 65g/ 2.3oz
Almonds (unpeeled), coarsely chopped| 4 tablespoons

Preparation

Mix the apples with the sugar, lemon juice and vanilla. Set aside.
Make the crumble: pour all the ingredients into a bowl and rub in with fingertips until crumbs form.
Butter a large oven dish, or 4 small single-portion ramekins. Distribute the apples inside and sprinkle the crumble mix on top. Bake at 200°C/390°F for around 25-30 minutes, or until the fruit is soft and the crumble is golden.
If the crumble browns too quickly, lower the temperature to 180°C/ 350°F. Leave to rest for 10 minutes before serving; accompany with ice-cream or vanilla sauce if desired.
