The warm spring days incite us to eat tempting super-fresh desserts.
With a tub of milk ice-cream, a few tasty chocolate cookies and some Modì apple cubes, we can obtain irresistible ice-cream biscuits.
They’re fast, simple and fun to make, even by children (with the supervision of adults!)
Ingredients for 6 ice-cream cookies
Milk or vanilla ice-cream | 400g (14 ounces)
Large chocolate chip cookies (or other soft biscuits) | 12
Cored, peeled and diced Modì apples | 2
Cane sugar | 2 tablespoons
Natural liquid vanilla extract | ½ teaspoon
Lemon juice q.s.
Preparation
Put the apple, sugar, vanilla and lemon juice into a saucepan, add a trickle of water and cook, covered, for approximately 15 mins. Then uncover the saucepan and cook for a further 5 mins until all the liquids are absorbed. The apple should be soft, while still maintaining its shape. Set aside.
Mix the now cold apple with the ice-cream, roll into balls and place between two biscuits. Carry on preparing the ice-cream sandwiches in this way. Serve immediately.
