This slightly alcoholic water-ice is an ideal aperitif or light dessert to finish a meal.
It can also be served to refresh palates between courses, or to accompany fish dishes and delicate cheeses.
This water-ice is made using “Prosecco di Conegliano - Valdobbiadene Docg Extra Dry”, a white sparkling wine with a fresh bouquet rich in floral aromas, and apple pulp. It has an overall harmonious sweetness and a pleasingly fruity essence.
Ingredients for 4 people
Modì® apples: 900g / 31.74 ounces
water: 250g / 9 ounces
sugar: 160g / 5.64 ounces
Prosecco di Conegliano - Valdobbiadene Docg Extra Dry: 300g / 10.58 ounces
2 lemons, juice
Preparation
Prepare the water-ice: put water and sugar into a small saucepan and heat. When it boils, wait one minute, then turn off the heat and leave the mixture to cool.
Peel, core and chop the apples. Whisk them with the water and sugar syrup and the lemon juice until you obtain a smooth mixture. Add the Prosecco wine. Pour into a steel container and place in the freezer for several hours.
To obtain the right consistency, stir the water-ice with a fork at regular intervals (around every 40 minutes, about four times in all) while it is in the freezer so as to break the ice crystals.
Serve: take the water-ice out of the freezer 10 minutes before serving, pour a few tablespoonfuls in glasses or cups.
