Modì Apple Toasted Canapés with Camembert Cheese and Balsamic Vinegar Reduction

A glass of fine wine and a handful of appetizing toasted canapés: the perfect finger food to munch while chatting.
The sweet apple harmonizes with the balsamic vinegar reduction, which gives the whole a hint of subtle sharpness. The cheese represents complete and utter creaminess.

Ingredients for around 20 toasted canapés

Baguette bread | 1
Thinly slice Modì Apples | 2-3
Camembert Cheese | 250 g (9 ounces)
Fresh thyme and black pepper qs
Slightly salted butter qs

For the vinegar reduction:
Modena Balsamic Vinegar Igp* (Protected Geographical Indication) | 100 ml (3.5 fluid ounces)
Honey | 1 teaspoon
Wholemeal brown sugar | 1 teaspoon

Preparation

Prepare the reduction: put the ingredients into a small saucepan and let them reduce at low heat until you obtain a dense creamy sauce. Keep aside for later.

Slice the camembert and divide each slice in half. Slice the baguette and toast the slices on a grill and spread a thin layer of butter over each. Then add a slice of cheese and two/three slices of Modì apple. Top it all off with a final slice of cheese.
Grill the canapés in the oven at high heat for a few seconds until the cheese becomes creamy. Decorate with the vinegar reduction, thyme leaves and black pepper. Taste the canapés hot. Delicious at room temperature too.
