Freshness in your plate! A quick and easy salad offering a classic match: fruit and cheese. Feta is a Greek sheep’s milk cheese that gives a distinct savoury note; the rocket salad gives a moderately pungent nuance, while the apples add juiciness and sweetness.
Ingredients for 4 people
2 Modì® apples, cored and thinly sliced
2 bunches of rocket
Feta cheese: 200g / 7.05 ounces
a handful of shelled walnuts
for the vinaigrette
8 tablespoons of extra virgin olive oil
a sprinkling of lemon juice
½ teaspoon of walnut oil (optional)
fresh chives, to taste
Flor de Sal (salt flower) and black pepper
Preparation
Prepare the salad: wash and completely dry the rocket, put it into a bowl together with the apple slices. Make the vinaigrette blending all the ingredients (except the chives).
Crumble the feta cheese over the salad and add a generous handful of grated walnuts.
Serve: dress the salad with the vinaigrette and decorate it with small pieces of chive. Serve immediately. You can accompany it with some home style bread or croutons.
